Age: There's no canon age, but I'm gonna say around 50ish for his human form.

Character Information: Wiki page (Note: I know there's a month-long wait period for NEW canons, but I'm unsure about new content in existing media. Just to be safe though, I wanna acknowledge that it'll say Caviar was "released" in September, however that's just when he was made playable. He's been an NPC since May and his canon point is from July.)
Personality:
It would not be surprising to say most people find the captain intimidating at first glance. (At least...people who live in a world where the population is cookies) Described as ever-frowning and often mistaken as a pirate, Caviar can be a pretty scary guy. Though despite his crew's best efforts to make anyone trying to reach him feel crazy, it becomes all too apparent right away that Captain Caviar is far kinder than his rough exterior may suggest.
In fact, it turns out the captain is surprisingly cheerful and friendly. When the main cast is first introduced to him, Caviar invites everyone onto his ship and even offers them a round of drinks. He enjoys the company of those who respect him and his navy, which isn't too difficult in canon when they see all his medals and trophies on display or his impressive fleet.
This isn't to say that the captain is a braggart or anything. As a cookie of the sea and the game implying he grew up in the Republic's poorer Choco Mud Town, Caviar is simply proud of his accomplishments. His trophies are more than likely martial arts related, most notably the ones he won against the Convocation's high and mighty paladins. His crew started off laughably inexperienced but now can weather any storm, becoming the Republic's top line of defense. And now he's one of only two seawater cookies in the Crème Republic's Convocation of Elders. Which is...a really big deal for someone who didn't start off in the lap of luxury.
Despite all its problems, Caviar has a strong love for the Republic, which is probably why he's so protective of it. In fact, he outright states that if you love something, you have to be willing to protect it. This is absolutely why he's a part of the Convocation despite a very strong and vocal distain towards politics. Normally an outlier and quiet while everyone else is busy discussing matters, Caviar's motivation to stay in the council stems mainly for his need to protect his crew and home as more than just a captain. He'll let everyone else handle all the politic nonsense, as he puts it, his job is simple: defending the Republic.
UNLESS his fellow council members cross a line. The Republic is made out of two kinds of cookies: descendants of the original seafarers who first occupied the land mass and the descendants of cookies fleeing the Vanilla Kingdom while it was in the middle of a terrifying war. Save for a few notable examples, the Vanillian cookies eventually went on to be the more wealthier and influential of the two. Although he has nothing against the more sugary cookies, he can't stand when they look down on others and will absolutely speak up when stupid bullshit is going down. The most significant example is when the Convocation finds out that not one but TWO of their members were dealing with some pretty shady shit, and the Elders conclude that they should just cover it up from the public. Caviar objects, stating that if it were a cookie of the sea, the council would be doing things much differently and that he's sick of his fellow Elder's constantly resorting to coverups...implying this sort of thing may have happened before. Obviously they take this very well, just kidding, a huge fight breaks out and Captain Caviar doesn't back down from his stance. He probably would have stubbornly let it turn into a shouting match if the building wasn't suddenly attacked.
The man isn't simply made for politics, but that's okay, it's not his job. In the end, Captain Caviar Cookie is a sailor through and through. He loves the sea, he loves exploring it, and he loves taking down pirates and monsters. Before becoming an Elder, Oyster Cookie even approaches Caviar and suggests he check out what's happening in the Duskgloom Sea. Although being known as a death trap, the captain needs very little convincing and sets sail immediately. When it becomes apparent that Duskgloom's notorious random bouts of treacherous waves are too much for his crew, Caviar recklessly decides it's suddenly a one cookie job and goes it alone, only to crash his submarine and end up in a ship graveyard. If that wasn't enough, he catches the glimpse of a gigantic monster and just...decides to go after it. Thankfully he runs into another cookie who's just sorta deep sea diving at the same time, so he's not alone anymore while he decides to pull this shit, but he still...does that.
Such adventures and stories are great too because the captain gets a kick out of telling them. By his crew's reactions whenever he gets started up, it can be determined that this happens more than they would like and find themselves (affectionately) annoyed. It also becomes clear that Caviar may spin an overdramatic flair to his stories, as his crew will pipe up occasionally whenever they're "pretty sure it wasn't that bad" the last time they heard the story. Caviar will insist that he simply waits for the right audience to tell the story in full detail, but there is no denying he loves seeing people's (especially kid's) reactions to his theatrics.
